We pulled together a real espresso program inside Toastique West Village, the kind of place where the barista adjusts the grind between pulls and the cortado actually tastes like it should. The Katy Trail crowd stops in after morning runs. The Uptown office crowd grabs flat whites on the way to work. Saturday mornings, the West Village sidewalks fill up and people wander in for a latte and an avocado toast. It all works because the espresso is consistent and the line moves.
